Ingredients
  

Dry Ingredients
  • 1 cup whole wheat flour Can substitute with oat or almond flour for gluten-free option.
  • 1 pinch cinnamon Optional
Wet Ingredients
  • 1 cup mashed cooked sweet potato Approximately 1 medium sweet potato, cooked and mashed.
  • 1 large egg
  • 2 tablespoons unsweetened peanut butter Ensure it is xylitol-free.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. If you haven’t already, cook the sweet potato! You can either bake it in the oven or microwave it until soft. Allow it to cool slightly, then peel and mash it in a bowl.
  3. In a large mixing bowl, combine the mashed sweet potato, whole wheat flour, egg, peanut butter, and cinnamon (if using). Stir until a dough forms.
  4. Lightly flour your countertop and roll the dough out to about 1/4 inch thick.
  5. Using cookie cutters in your desired shapes, cut out cookies and place them on the prepared baking sheet.
Baking
  1. Bake in the preheated oven for 25-30 minutes until the cookies are firm and lightly golden.
  2. Allow the cookies to cool completely on a wire rack before serving them to your four-legged friend!

Notes

Store cookies in an airtight container for up to a week at room temperature or freeze for up to three months. Thaw at room temperature or warm in the microwave before serving.
