Ingredients
  

For the Crust
  • 16 cookies Oreo cookies Plus additional cookies for topping
  • 4 tablespoons unsalted butter, melted
For the Cheesecake Filling
  • 8 oz cream cheese, softened Ensure it's at room temperature
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream Or 1 cup heavy cream whipped to soft peaks

Method
 

Prepare the Crust
  1. Crush the 16 Oreo cookies into fine crumbs using a food processor or by rolling over them with a rolling pin in a bag.
  2. Mix the cookie crumbs with melted butter until well combined.
  3. Press the mixture firmly into the bottom of a parchment-lined 8x8-inch baking dish to form the crust.
Make the Cheesecake Filling
  1. In a mixing bowl, beat the softened cream cheese until creamy and smooth.
  2. Gradually add in the powdered sugar and vanilla extract, mixing until combined.
  3. Gently fold in the whipped cream to create a light, fluffy filling.
Assemble the Bars
  1. Spread the cheesecake filling evenly over the crust.
  2. Crumble additional Oreos on top for a delightful crunch and visual appeal.
Chill
  1. Cover the dish with plastic wrap and refrigerate for at least 2-3 hours or until set.
Serve
  1. Once chilled, lift the bars out of the dish using the parchment paper and cut them into squares.

Notes

For best results, allow the bars to chill properly before serving. They can be stored in an airtight container in the refrigerator for 3-4 days or frozen for up to 2 months.
