  • 1 cup graham cracker crumbs

  • 5 tablespoons unsalted butter melted
  • For the Filling:
  • 2 cups fresh peaches peeled and diced
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 1/2 teaspoon cinnamon
  • 1 cup heavy cream whipped
  • 1/2 cup cream cheese softened
  • 1/4 cup powdered sugar
  • For Garnish:
  • Extra peach slices
  • Whipped cream
  • Cinnamon optional

Method
 

  1. Step 1: Prepare the Crust
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter until the mixture resembles wet sand.
  3. Divide the mixture evenly into serving cups and press down gently to form a crust layer.
  4. Step 2: Cook the Peach Filling
  5. In a saucepan over medium heat, combine the diced peaches, sugar, vanilla, lemon juice, and cinnamon.
  6. Cook for 5-7 minutes, stirring occasionally, until the peaches are soft and syrupy. Allow to cool completely.
  7. Step 3: Make the Cream Layer
  8. Using an electric mixer, whip the heavy cream until soft peaks form. Set aside.
  9. In another bowl, beat the cream cheese and powdered sugar until smooth. Gently fold in the whipped cream until combined.
  10. Step 4: Assemble the Dessert Cups
  11. Spoon or pipe a layer of the cream mixture over the crust in each cup.
  12. Add a layer of the peach filling.
  13. Repeat the layers, finishing with a dollop of whipped cream on top.
  14. Step 5: Garnish and Chill
  15. Garnish with extra peach slices and a sprinkle of cinnamon if desired.
  16. Chill the dessert cups in the refrigerator for at least 1 hour before serving.
