Elegant Teriyaki Chicken Avocado Rice Stack

Indulge in the delicious and elegant Teriyaki Chicken Avocado Rice Stack. This layered dish combines tender chicken, creamy avocado, and savory teriyaki sauce for a perfect meal that's both healthy and flavorful.

Equipment

  • Skillet or grill pan
  • Medium saucepan for rice
  • Small bowl for sauce mixture
  • Spoon or spatula

Ingredients
  

  • For the Chicken:
  • 2 boneless skinless chicken breasts
  • 1/4 cup teriyaki sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • For the Rice:
  • 2 cups cooked white or brown rice
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • Salt to taste
  • For the Avocado:
  • 1 ripe avocado sliced
  • For Garnish:
  • 1 tablespoon sesame seeds
  • Fresh cilantro chopped (optional)
  • 1 green onion sliced thinly (optional)

Instructions
 

  • Step 1: Prepare the Rice
  • Cook the rice according to the package instructions.
  • Once cooked, fluff the rice with a fork and stir in the rice vinegar, sesame oil, and a pinch of salt. Set aside.
  • Step 2: Cook the Chicken
  • Season the chicken breasts with salt and pepper.
  • In a skillet or grill pan, heat olive oil over medium heat.
  • Add the chicken breasts and cook for about 6-7 minutes per side, or until fully cooked through and golden brown.
  • Brush the chicken with teriyaki sauce during the last 2 minutes of cooking, allowing the sauce to caramelize on the chicken.
  • Remove from heat and let the chicken rest for a few minutes before slicing it into thin strips.
  • Step 3: Assemble the Stack
  • On individual serving plates, place a layer of seasoned rice as the base.
  • Add a layer of sliced chicken on top of the rice.
  • Gently arrange the avocado slices on top of the chicken.
  • Step 4: Drizzle with Sauce and Garnish
  • Drizzle a little more teriyaki sauce over the stack for extra flavor.
  • Sprinkle sesame seeds over the top and add green onions and fresh cilantro for garnish if desired.
