Step 1: Prepare the Rice
Cook the rice according to the package instructions.
Once cooked, fluff the rice with a fork and stir in the rice vinegar, sesame oil, and a pinch of salt. Set aside.
Step 2: Cook the Chicken
Season the chicken breasts with salt and pepper.
In a skillet or grill pan, heat olive oil over medium heat.
Add the chicken breasts and cook for about 6-7 minutes per side, or until fully cooked through and golden brown.
Brush the chicken with teriyaki sauce during the last 2 minutes of cooking, allowing the sauce to caramelize on the chicken.
Remove from heat and let the chicken rest for a few minutes before slicing it into thin strips.
Step 3: Assemble the Stack
On individual serving plates, place a layer of seasoned rice as the base.
Add a layer of sliced chicken on top of the rice.
Gently arrange the avocado slices on top of the chicken.
Step 4: Drizzle with Sauce and Garnish
Drizzle a little more teriyaki sauce over the stack for extra flavor.
Sprinkle sesame seeds over the top and add green onions and fresh cilantro for garnish if desired.
