      Cut the potatoes into wedges: slice each potato in half lengthwise, then cut each half into 3-4 wedges, depending on size.

      Soak the potato wedges in cold water for 15-20 minutes to remove excess starch. This helps achieve extra crispiness. Drain and pat them completely dry with a paper towel.

      3. Season the Wedges:
      In a large mixing bowl, toss the potato wedges with olive oil, garlic powder, paprika, salt, black pepper, and oregano until evenly coated.

      4. Preheat the Air Fryer:
      Preheat the air fryer to 400°F (200°C) for 3-5 minutes.

      5. Air Fry the Wedges:
      Place the seasoned potato wedges in the air fryer basket in a single layer. Cook at 400°F for 15-18 minutes, shaking the basket halfway through, until the wedges are golden brown and crispy.

      6. Serve:
      Garnish with fresh parsley, if desired, and serve hot with your favorite dipping sauce, such as ketchup, aioli, or ranch.
