Preparation
- Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with a bit of oil or cooking spray.
- In a large bowl, combine the grated zucchini, sugar, vegetable oil, and eggs. Mix well until combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
- Gradually fold the dry ingredients into the wet mixture, being careful not to overmix.
Baking
- Pour the batter into the prepared baking dish and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Cooling and Frosting
- Allow the bars to cool in the pan for about 10-15 minutes before transferring to a wire rack. Once cooled, drizzle caramel sauce over the top.

- Cut into squares and enjoy!
Notes
Store in an airtight container in the refrigerator for up to 5 days. To freeze, wrap individual pieces in plastic wrap and place in a freezer-safe bag for up to 3 months. Reheat in the microwave for about 15-20 seconds or warm in the oven.
