Wet Ingredients
  • 2 cups grated zucchini (squeezed to remove excess moisture) Ensure excess moisture is removed.
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs Room temperature preferred.
Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
Frosting
  • 1 cup caramel sauce See note for homemade options.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with a bit of oil or cooking spray.
  2. In a large bowl, combine the grated zucchini, sugar, vegetable oil, and eggs. Mix well until combined.
  3. In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
  4. Gradually fold the dry ingredients into the wet mixture, being careful not to overmix.
Baking
  1. Pour the batter into the prepared baking dish and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Cooling and Frosting
  1. Allow the bars to cool in the pan for about 10-15 minutes before transferring to a wire rack. Once cooled, drizzle caramel sauce over the top.
Serving
  1. Cut into squares and enjoy!

Notes

Store in an airtight container in the refrigerator for up to 5 days. To freeze, wrap individual pieces in plastic wrap and place in a freezer-safe bag for up to 3 months. Reheat in the microwave for about 15-20 seconds or warm in the oven.
