Preparation
- Pat shrimp dry with a kitchen towel and season with salt and pepper.
- Bring water to a boil in a large pot and add pasta or rice according to package instructions. Once cooked, drain and set aside.
Cooking
- In a large skillet over medium heat, warm the olive oil. Add minced garlic and red pepper flakes, cooking for about 1 minute until fragrant.
- Add the shrimp to the skillet and cook until they turn pink and opaque, approximately 3–5 minutes.
- Pour in the lemon juice and zest, stirring to coat the shrimp evenly. Allow to simmer for an additional 2–3 minutes, adjusting seasoning if needed.
- Toss the cooked pasta in the skillet with the shrimp mixture until well combined.
- Dish the shrimp scampi over the pasta or rice, garnish with chopped parsley, and serve with garlic bread on the side.
Notes
For best results, use high-quality shrimp and watch the garlic to prevent it from burning. Store leftovers in an airtight container for up to three days.
