  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces Use fresh chicken for the best taste.
  • 3 cloves garlic, minced Freshly minced garlic is recommended.
  • 1/4 cup fresh lemon juice (about 2 lemons) For best flavor, use freshly squeezed lemon juice.
  • 2 tablespoons olive oil Extra virgin olive oil works well.
  • 1 teaspoon dried oregano Can be substituted with fresh oregano.
  • Salt to taste Salt Use sea salt for better flavor.
  • Pepper to taste Pepper Freshly ground pepper is ideal.
For Garnishing
  • Lemon wedges Lemon wedges For serving.
  • Fresh parsley Fresh parsley Chopped, for garnishing.

Method
 

Marinating the Chicken
  1. In a medium mixing bowl, combine the lemon juice, minced garlic, olive oil, oregano, salt, and pepper. Add the chicken pieces and toss until they’re well coated. Cover and let them marinate in the refrigerator for at least 15 minutes (or up to 2 hours if you have the time!).
Prepping to Cook
  1. If you’re baking, preheat your oven to 400°F (200°C). For grilling, preheat your grill to medium-high.
Cooking the Chicken
  1. For baking, spread the marinated chicken pieces in a single layer on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until the chicken is cooked through.
  2. For grilling, thread the chicken onto skewers (if using wood, soak them in water for 30 minutes to prevent burning) and grill for about 10-15 minutes, turning occasionally until fully cooked.
Serving
  1. Once cooked, remove the chicken from the oven or grill. Serve hot, garnished with fresh lemon wedges and parsley.

Notes

Use fresh ingredients for the best flavor. Store leftovers in an airtight container; they’ll stay fresh for up to 3 days in the refrigerator or can be frozen for up to 2 months.
