For the Tzatziki
  • 1 cup plain Greek yogurt (preferably whole milk) Substitutions can include cream cheese or sour cream.
  • 1/2 cup dill pickles, finely chopped
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill) Fresh dill enhances flavor.
  • 1 clove garlic, minced Adjust to taste.
  • 1 tablespoon lemon juice Freshly squeezed is best.
  • Salt and black pepper to taste

Preparation
  1. Finely chop the dill pickles and mince the garlic. If using fresh dill, chop that as well.
  2. In a medium mixing bowl, add the plain Greek yogurt. Stir in the minced garlic, chopped dill pickles, fresh dill (if using), and lemon juice.
  3. Using a spatula or a whisk, combine everything until well-blended, achieving a creamy, uniform texture.
  4. Sprinkle in salt and black pepper according to your preference. Mix again to incorporate.
  5. Allow the tzatziki to rest in the refrigerator for at least 30 minutes to let the flavors meld beautifully.
  6. Serve with an assortment of dippers like pita chips, fresh vegetables, or as a spread in wraps.

Notes

For a creamier texture, consider blending in some cream cheese or sour cream. Making tzatziki a few hours in advance allows flavors to deepen. Avoid over-mixing to maintain the chunky texture.
