Ingredients
  

For the Salmon Bites
  • 1 lb fresh salmon fillet, skin removed
  • 1 cup panko bread crumbs
  • ½ cup all-purpose flour (or gluten-free flour, if needed)
  • 2 large eggs
  • ½ cup mayonnaise
  • 2 tablespoons Sriracha sauce Adjust to taste
  • 1 tablespoon honey (or maple syrup for a vegan option)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

Method
 

Preparation
  1. Cut the fresh salmon into bite-sized pieces. Pat them dry with a paper towel to remove excess moisture.
  2. In one bowl, place the all-purpose flour seasoned with salt and black pepper. In another bowl, beat the eggs. In a third bowl, add the panko breadcrumbs mixed with garlic powder and paprika.
Coating and Frying
  1. Roll each salmon piece in the flour, dip it in the beaten egg, and then coat it in the panko breadcrumb mixture.
  2. Heat a non-stick skillet over medium heat with a few tablespoons of oil. Add the salmon bites in batches and cook for about 2-3 minutes on each side until golden brown.
Making the Sauce
  1. In a bowl, mix the mayonnaise, Sriracha sauce, honey, and a pinch of salt. Adjust spice level to taste.
Serving
  1. Once cooked, drain the bites on a paper towel. Drizzle with the Bang Bang sauce and garnish with chopped chives before serving.

Notes

For a lighter version, consider baking these bites at 400°F for about 15-20 minutes. Ensure the oil is hot before frying to achieve that perfect crisp.
