Preparation
- Cut the fresh salmon into bite-sized pieces. Pat them dry with a paper towel to remove excess moisture.
- In one bowl, place the all-purpose flour seasoned with salt and black pepper. In another bowl, beat the eggs. In a third bowl, add the panko breadcrumbs mixed with garlic powder and paprika.
Coating and Frying
- Roll each salmon piece in the flour, dip it in the beaten egg, and then coat it in the panko breadcrumb mixture.
- Heat a non-stick skillet over medium heat with a few tablespoons of oil. Add the salmon bites in batches and cook for about 2-3 minutes on each side until golden brown.
Making the Sauce
- In a bowl, mix the mayonnaise, Sriracha sauce, honey, and a pinch of salt. Adjust spice level to taste.
Serving
- Once cooked, drain the bites on a paper towel. Drizzle with the Bang Bang sauce and garnish with chopped chives before serving.
Notes
For a lighter version, consider baking these bites at 400°F for about 15-20 minutes. Ensure the oil is hot before frying to achieve that perfect crisp.
