Ingredients
  

Pasta and Vegetables
  • 8 oz rotini or penne pasta Cook according to package instructions
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced (any color)
  • 1/2 red onion, finely chopped
  • 1 cup Kalamata olives, pitted and halved
  • 1 cup feta cheese, crumbled
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Preparation
  1. Bring a large pot of salted water to a boil. Add the rotini or penne pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. While the pasta is cooking, chop the cherry tomatoes, cucumber, bell pepper, and red onion. Place in a large mixing bowl.
  3. Once the pasta is cooled, add it to the bowl with veggies. Toss in the olives and feta cheese.
  4. In a separate small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper.
  5. Pour the dressing over the pasta salad mixture. Gently toss to combine all ingredients evenly, ensuring everything is coated in that delightful zesty flavor.
  6. You can serve immediately, or let it chill in the refrigerator for about 30 minutes to allow flavors to meld together even more.

Notes

This salad is flexible; you can swap veggies or use fresh herbs for added flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days.
