  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 piece bell pepper (any color), chopped
  • ½ cup red onion, thinly sliced
  • ¼ cup olives (optional) Adds a briny touch.
Cheese
  • 1 cup crumbled feta cheese For a Halal substitute, use goat cheese or dairy-free option.
Dressing
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • to taste Salt and black pepper Start with a little dressing and adjust to taste.

Method
 

Preparation
  1. Rinse all your fresh produce.
  2. Dice the cucumbers, chop the bell pepper, and halve the cherry tomatoes.
  3. Thinly slice the red onion.
Combination
  1. In a large mixing bowl, add the mixed greens, diced cucumbers, cherry tomatoes, chopped bell pepper, sliced red onion, and crumbled feta cheese. If you're using olives, toss a handful in.
Dressing
  1. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
Serving
  1. Drizzle the dressing over the salad, and gently toss everything together until well combined.
  2. Garnish with additional feta or olives before serving if desired.

For best results, refrigerate any leftovers promptly. This salad is best enjoyed fresh, as the vegetables may lose their crispness over time. If you need to reheat any leftovers, consider using the microwave, but it’s usually delicious cold.
