  • 2 cups cucumber, diced Keep the skin on for added crunch.
  • 1 cup cherry tomatoes, halved Use a mix of colors for a vibrant salad.
  • 1 cup bell peppers, diced Any color bell pepper can be used.
  • 1/2 cup red onion, thinly sliced Soak in cold water for a milder taste if desired.
  • 1 cup feta cheese, crumbled Use Greek feta for authentic flavor.
  • 1/4 cup black olives, sliced Optional; use Kalamata or any preferred type.
For the Dressing
  • 1/4 cup olive oil Extra virgin olive oil enhances flavor.
  • 2 tablespoons fresh lemon juice Freshly squeezed for best results.
  • 1 teaspoon dried oregano Can substitute with fresh oregano if available.
  • to taste Salt and pepper Adjust to preference.

Method
 

Preparation
  1. Wash and dice the cucumbers, cherry tomatoes, bell peppers, and red onion into bite-sized pieces.
  2. In a small bowl, whisk together olive oil, fresh lemon juice, dried oregano, salt, and pepper.
Assembly
  1. In a large mixing bowl, combine chopped vegetables, crumbled feta, and black olives.
  2. Drizzle the dressing over the salad and gently toss to combine without over-mixing.
  3. Chill the salad in the refrigerator for at least 15 minutes before serving.

Notes

Substitutions can include zucchini or radishes. Best if consumed within 2-3 days. Avoid reheating.
