  • 1 tablespoon honey
  • 1 tablespoon freshly squeezed lemon juice
  • Salt and pepper to taste

Preparation
  1. Start by peeling the carrots and grating them using a box grater or a food processor.
  2. Segment the oranges over a bowl to catch any juice that might escape.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, honey, lemon juice, salt, and pepper until well combined.
Combine the Salad
  1. In a large mixing bowl, toss the grated carrots and orange segments together.
