Method
 

Preparation
  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat the softened butter and powdered sugar together until the mixture is light and fluffy.
  3. In a separate bowl, whisk together the all-purpose flour, cornstarch, and salt. Gradually combine this dry mixture into the butter-sugar mixture until well blended.
  4. Stir in the vanilla extract, white chocolate chips, and chopped dried cherries until evenly incorporated.
  5. Scoop out tablespoon-sized portions of dough and roll them into balls. Slightly flatten them on the prepared baking sheet.
Baking
  1. Bake in the preheated oven for 15-20 minutes, or until the edges are lightly golden. Be careful not to overbake!
Cooling and Serving
  1. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy with a cup of tea or coffee!

Notes

Store cookies in an airtight container at room temperature for up to a week. Freeze them for up to three months, separating layers with parchment paper.
