  • 1 cup walnuts, roughly chopped
  • 1/4 cup pure maple syrup
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • a pinch cinnamon or nutmeg (optional) For extra flavor boost

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the cubed sweet potatoes with olive oil, salt, and black pepper. Toss until the sweet potatoes are evenly coated.
  3. Transfer the sweet potato mixture to a large baking sheet lined with parchment paper, spreading them out in a single layer for even roasting.
Cooking
  1. Roast in the preheated oven for about 20 minutes, or until the sweet potatoes are tender and slightly caramelized. Stir halfway through to ensure even cooking.
  2. Once the sweet potatoes are done, remove the baking sheet from the oven. Sprinkle the chopped walnuts over the sweet potatoes and drizzle with maple syrup.
  3. Place the baking sheet back in the oven for an additional 5 minutes, allowing the walnuts to toast slightly and the maple syrup to caramelize.
  4. Remove from the oven and serve warm, garnished with a sprinkle of cinnamon or nutmeg, if desired.

Notes

Cut sweet potato cubes uniformly for even cooking. Adjust sweetness to your preference and serve fresh for the best flavor.
