Preparation
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the cubed sweet potatoes with olive oil, salt, and black pepper. Toss until the sweet potatoes are evenly coated.
- Transfer the sweet potato mixture to a large baking sheet lined with parchment paper, spreading them out in a single layer for even roasting.
Cooking
- Roast in the preheated oven for about 20 minutes, or until the sweet potatoes are tender and slightly caramelized. Stir halfway through to ensure even cooking.
- Once the sweet potatoes are done, remove the baking sheet from the oven. Sprinkle the chopped walnuts over the sweet potatoes and drizzle with maple syrup.
- Place the baking sheet back in the oven for an additional 5 minutes, allowing the walnuts to toast slightly and the maple syrup to caramelize.
- Remove from the oven and serve warm, garnished with a sprinkle of cinnamon or nutmeg, if desired.
