  • 2 medium sweet potatoes (peeled and cut into bite-sized cubes)
  • ¼ cup walnuts (chopped)
  • ½ cup crumbled goat cheese
  • ¼ cup maple syrup (pure natural)
  • 2 tablespoons olive oil (extra virgin)
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper
  • Fresh herbs for garnish (like thyme or parsley, optional) Optional for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the sweet potato cubes with olive oil, salt, and pepper until well-coated.
Cooking
  1. Spread the seasoned sweet potatoes in a single layer on a parchment-lined baking sheet.
  2. Roast in the preheated oven for 25 minutes, tossing halfway through.
  3. After 25 minutes, sprinkle the chopped walnuts on top and drizzle the maple syrup evenly over everything.
  4. Return to the oven for another 10 minutes until the walnuts toast and the flavors meld.
  5. Once out of the oven, sprinkle the crumbled goat cheese over the warm sweet potatoes.
  6. Finish with fresh herbs for extra flavor and color and serve.

Notes

If goat cheese isn’t available, feta works as a great substitute. Be sure not to overcrowd the baking sheet for even roasting. Leftovers can be stored in an airtight container for up to 3 days.
