Preparation
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the sweet potato cubes with olive oil, salt, and pepper until well-coated.
Cooking
- Spread the seasoned sweet potatoes in a single layer on a parchment-lined baking sheet.
- Roast in the preheated oven for 25 minutes, tossing halfway through.
- After 25 minutes, sprinkle the chopped walnuts on top and drizzle the maple syrup evenly over everything.
- Return to the oven for another 10 minutes until the walnuts toast and the flavors meld.
- Once out of the oven, sprinkle the crumbled goat cheese over the warm sweet potatoes.
- Finish with fresh herbs for extra flavor and color and serve.
Notes
If goat cheese isn’t available, feta works as a great substitute. Be sure not to overcrowd the baking sheet for even roasting. Leftovers can be stored in an airtight container for up to 3 days.
