Ingredients

Main Ingredients
  • 8 oz spaghetti or your favorite noodles (ensure they are vegan)
  • 4 tablespoons olive oil
  • 5 cloves garlic, minced Fresh garlic adds unbeatable flavor.
  • 1/4 cup soy sauce (or tamari for a gluten-free option)
  • 1 tablespoon sesame oil
  • 1 tablespoon maple syrup or agave nectar
  • 1/4 teaspoon red pepper flakes (optional, for spice) Adjust for spice according to taste.
Garnishes
  • Fresh herbs (like cilantro or green onions) for garnish
  • Toasted sesame seeds for topping

Method

Cooking the Noodles
  1. Start by boiling a large pot of salted water. Add your spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water and then drain the noodles.
Making the Garlic Sauce
  1. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes, until it becomes golden and fragrant—be careful not to burn it!
Combining Ingredients
  1. To the skillet, add the soy sauce, sesame oil, maple syrup, and red pepper flakes (if using). Stir the mixture until combined, bringing it to a simmer.
Adding Noodles
  1. Once the sauce is ready, add the drained noodles to the skillet. Toss everything together, adding reserved pasta water a little at a time to help coat the noodles and achieve a silky sauce.
Garnishing and Serving
  1. After everything is mixed well, remove from heat and serve hot. Garnish with toasted sesame seeds and fresh herbs for an extra burst of flavor.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of water or a drop of oil in a skillet over low heat.
