Preparation
- Begin by boiling a large pot of salted water. Add the spaghetti and cook according to package directions until al dente. Drain and set aside.
- In a large skillet over medium heat, add a splash of olive oil. Sauté the onion, bell pepper, and garlic until softened, about 3-4 minutes.
Combining Ingredients
- Lower the heat, then add the cooked chicken, cream of chicken soup, chicken broth, diced tomatoes, salt, pepper, and Italian seasoning (if using). Stir everything together and let it simmer for about 5 minutes.
- Gradually add the cooked spaghetti into the skillet and mix well to coat the pasta with the sauce. Stir in half of the shredded cheese and mix until melted.
- Top with the remaining cheese and let it melt for an additional 2-3 minutes before removing it from the heat.
Serving

Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. For longer storage, it can freeze well for up to 3 months. Reheat by thawing and warming with a splash of chicken broth.
