- Wash the cucumber, peel if desired, cut it in half lengthwise, and scoop out the seeds.
- Grate the cucumber and place it in a clean kitchen towel or cheesecloth, then squeeze out excess moisture.
- In a medium bowl, add Greek yogurt, minced garlic, and squeezed cucumber.
- Drizzle in olive oil and lemon juice, then season with salt and pepper to taste.
- Stir everything together until well combined and adjust seasonings as needed.
- Cover the tzatziki and let it chill in the refrigerator for at least 30 minutes.

Notes
For best results, use full-fat Greek yogurt, don’t skip the draining step, and let it chill to enhance flavors. Store in an airtight container for up to 4-5 days or freeze for a month.
