  • 1 cup Greek yogurt Use full-fat for a creamier texture
  • 1 medium cucumber Seeded and grated
  • 2 cloves garlic Minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice Freshly squeezed is best
  • to taste Salt and pepper For seasoning
  • to taste Fresh dill or mint Optional, for extra flavor

Method
 

Preparation
  1. Wash the cucumber, peel if desired, cut it in half lengthwise, and scoop out the seeds.
  2. Grate the cucumber and place it in a clean kitchen towel or cheesecloth, then squeeze out excess moisture.
  3. In a medium bowl, add Greek yogurt, minced garlic, and squeezed cucumber.
  4. Drizzle in olive oil and lemon juice, then season with salt and pepper to taste.
  5. Stir everything together until well combined and adjust seasonings as needed.
  6. Cover the tzatziki and let it chill in the refrigerator for at least 30 minutes.
Serving
  1. Serve with grilled meats, fresh veggies, or pita bread.

Notes

For best results, use full-fat Greek yogurt, don’t skip the draining step, and let it chill to enhance flavors. Store in an airtight container for up to 4-5 days or freeze for a month.
