The Best Sweet Yeast Roll Dough Recipe

Ingredients
  

  • 1 cup 240ml warm milk (about 110°F/43°C)
  • 2 1/4 teaspoons 1 packet active dry yeast
  • 1/3 cup 65g granulated sugar
  • 2 large eggs room temperature
  • 1/4 cup 60g unsalted butter, melted and slightly cooled
  • 1 teaspoon salt
  • 4 cups 500g all-purpose flour, plus more for dusting

Instructions
 

  • Activate the Yeast:
  • In a small bowl, combine the warm milk, yeast, and 1 tablespoon of sugar. Stir gently and let it sit for 5–10 minutes until the mixture becomes frothy.
  • Mix Wet Ingredients:
  • In a large mixing bowl or the bowl of a stand mixer, whisk together the remaining sugar, eggs, melted butter, and salt. Add the activated yeast mixture and stir to combine.
  • Incorporate the Flour:
  • Gradually add the flour, one cup at a time, mixing until a sticky dough forms. If using a stand mixer, switch to the dough hook and knead on medium speed for 6–8 minutes, or knead by hand on a floured surface for about 10 minutes until the dough is smooth and elastic.
  • First Rise:
  • Transfer the dough to a lightly greased bowl, cover with a clean kitchen towel or plastic wrap, and let it rise in a warm place for 1–2 hours, or until doubled in size.
  • Shape the Dough:
  • Once risen, punch down the dough and shape it as desired—into rolls, buns, or other creations. Place the shaped dough onto a greased or parchment-lined baking sheet or pan.
  • Second Rise:
  • Cover the dough again and let it rise for another 30–45 minutes until puffy.
  • Bake:
  • Preheat your oven to 375°F (190°C). Bake the rolls for 12–15 minutes, or until golden brown.
  • Serve:
  • Brush the warm rolls with melted butter for an extra soft and flavorful finish.
