Ingredients
  

For the cake base
  • 1 can 15 oz pumpkin puree Canned pumpkin puree can be used or fresh pumpkin
  • 1 cup sugar
  • 1 cup milk
  • 3 large eggs
  • 2 tsp pumpkin pie spice Adjust based on personal preference for spice levels
For the topping
  • 1 box 15.25 oz yellow cake mix Do not stir into the pumpkin mixture, just sprinkle on top
  • 1/2 cup unsalted butter, melted Drizzle over cake mix
  • 1 cup chopped nuts (optional) For added crunch

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine pumpkin puree, sugar, milk, eggs, and pumpkin pie spice. Whisk until well blended.
  3. Grease a 9x13-inch baking dish and pour the pumpkin mixture into it.
  4. Evenly sprinkle the box of yellow cake mix over the pumpkin mixture. Do not stir.
  5. Drizzle the melted butter over the cake mix and optionally sprinkle with chopped nuts.
Baking
  1. Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  2. Allow the cake to cool slightly before serving. Enjoy warm or at room temperature.

Notes

For best results, use fresh pumpkin for a more vibrant flavor. Customize toppings to taste and avoid overmixing once the cake mix is added.
