  • 200 grams Feta Cheese Block style for best results
  • 2 cups Cherry Tomatoes, halved Ripe tomatoes for best flavor
  • 2 tablespoons Olive Oil
  • 4 cloves Garlic, minced
  • 250 grams Pasta (penne or any pasta of your choice) Cook until al dente
  • Salt, to taste
  • Black Pepper, to taste
  • 1/2 teaspoon Red Pepper Flakes (optional) For added heat
  • Fresh Basil or Parsley, for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, combine the halved cherry tomatoes with minced garlic. Drizzle with olive oil, and sprinkle with salt, black pepper, and optional red pepper flakes.
  3. Make space in the center of the dish and place the block of feta cheese there. Drizzle a bit of olive oil over the feta.
  4. Bake in the preheated oven for about 25 minutes, until the tomatoes are blistering and the feta is melting and golden at the edges.
  5. While the dish bakes, cook the pasta according to package instructions until al dente.
  6. Once the feta and tomatoes are ready, carefully mash them together to create a creamy sauce. Add the cooked pasta, stirring until well combined.
  7. Serve immediately, garnished with fresh basil or parsley.

Notes

If using leftovers, store in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for about 15 minutes, adding a splash of olive oil if needed.
