Preparation
- Preheat your oven to 400°F (200°C).
- In a baking dish, combine the halved cherry tomatoes with minced garlic. Drizzle with olive oil, and sprinkle with salt, black pepper, and optional red pepper flakes.
- Make space in the center of the dish and place the block of feta cheese there. Drizzle a bit of olive oil over the feta.
- Bake in the preheated oven for about 25 minutes, until the tomatoes are blistering and the feta is melting and golden at the edges.
- While the dish bakes, cook the pasta according to package instructions until al dente.
- Once the feta and tomatoes are ready, carefully mash them together to create a creamy sauce. Add the cooked pasta, stirring until well combined.
- Serve immediately, garnished with fresh basil or parsley.
Notes
If using leftovers, store in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for about 15 minutes, adding a splash of olive oil if needed.
