  • 2 stalks lemongrass, chopped Chop finely to release the flavors.
  • 3 cloves garlic, minced Use fresh garlic for the best flavor.
  • 1 teaspoon ginger, grated Fresh ginger is recommended.
  • 2 tablespoons fish sauce Adds depth of flavor.
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar Can be substituted with honey.
  • 1 tablespoon lime juice Freshly squeezed for the best taste.
Main Ingredients
  • 4 pieces chicken thighs or breasts Use skin-on for extra crispy texture.
  • 2 tablespoons vegetable oil Used for cooking the chicken.
  • 1 bunch fresh cilantro, for garnish Chopped for serving.

Method
 

Preparation
  1. In a bowl, mix together the chopped lemongrass, minced garlic, grated ginger, fish sauce, soy sauce, brown sugar, and lime juice.
  2. Add the chicken thighs or breasts to the mixture, ensuring they are well-coated. Cover and let marinate for at least 15 minutes (up to 2 hours for deeper flavor).
Cooking
  1. In a large skillet, heat the vegetable oil over medium-high heat.
  2. Add the marinated chicken to the skillet, allowing it to sear for about 5-7 minutes until it develops a golden brown crust.
  3. Flip the chicken and cook for an additional 5-7 minutes until fully cooked through (the internal temperature should reach 165°F).
Serving
  1. Remove the chicken from the skillet and allow it to rest for a few minutes.
  2. Slice it up and serve garnished with fresh cilantro and wedges of lime to squeeze over the top.

Notes

Substitutions: If you can't find lemongrass, use lemongrass paste or lime zest. For a plant-based option, use firm tofu. Timing: Marinating longer intensifies flavor. Ensure skillet is hot for crispy chicken.
