Method
Preparation
- In a bowl, mix together the chopped lemongrass, minced garlic, grated ginger, fish sauce, soy sauce, brown sugar, and lime juice.
- Add the chicken thighs or breasts to the mixture, ensuring they are well-coated. Cover and let marinate for at least 15 minutes (up to 2 hours for deeper flavor).
Cooking
- In a large skillet, heat the vegetable oil over medium-high heat.
- Add the marinated chicken to the skillet, allowing it to sear for about 5-7 minutes until it develops a golden brown crust.
- Flip the chicken and cook for an additional 5-7 minutes until fully cooked through (the internal temperature should reach 165°F).
Serving
- Remove the chicken from the skillet and allow it to rest for a few minutes.
- Slice it up and serve garnished with fresh cilantro and wedges of lime to squeeze over the top.
Notes
Substitutions: If you can't find lemongrass, use lemongrass paste or lime zest. For a plant-based option, use firm tofu. Timing: Marinating longer intensifies flavor. Ensure skillet is hot for crispy chicken.
