  • 1 cup teriyaki sauce Must be halal-friendly
  • 1 cup pineapple chunks, fresh or canned
  • 1 medium bell pepper, sliced (any color)
  • 1 medium onion, sliced
  • to taste salt and pepper

Method
 

Preparation
  1. Preheat the grill to medium-high heat or preheat the oven to 400°F (200°C).
  2. Tear off large pieces of aluminum foil to create packets that will hold all your ingredients without leaking.
  3. In a mixing bowl, combine the chicken, teriyaki sauce, pineapple chunks, bell pepper slices, and onion. Season with salt and pepper.
  4. Scoop an equal amount of the mixture onto the center of each foil piece. Fold the sides of the foil up, then fold the top and bottom to seal the packet tightly, ensuring no gaps for steam to escape.
Cooking
  1. Place the foil packets on the grill for about 15-20 minutes or in the oven for 20-25 minutes, until the chicken is cooked through and tender.
Serving
  1. Carefully open the packets—watch out for hot steam! Serve the contents over a bed of cooked rice for a complete meal.

Notes

Feel free to swap in halal-friendly proteins, such as diced beef or tofu, for a different taste experience. Keep an eye on the cooking time; larger chunks of chicken may require additional minutes. Ensure that your foil packets are sealed tightly to avoid leaks.
