  • 2 pieces boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 cup teriyaki sauce Use your favorite brand
  • 1 medium pineapple (peeled, cored, and cut into chunks)
  • 1 piece red bell pepper (chopped into bite-sized pieces)
  • 1 piece green bell pepper (chopped into bite-sized pieces)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Aluminum foil For wrapping

Method
 

Preparation
  1. In a bowl, combine the cut chicken and teriyaki sauce. Let marinate for at least 15 minutes while you prep the other ingredients.
  2. Cut large sheets of aluminum foil (about 12 inches each) enough to wrap around the chicken and vegetables comfortably.
Assembly
  1. Place a layer of chicken pieces in the center of each foil sheet. Then, add chunks of pineapple, red and green bell peppers. Drizzle a little olive oil and season with salt and pepper.
  2. Fold the sides of the foil over the chicken and vegetables to create a sealed packet, ensuring no steam can escape.
Cooking
  1. Place the foil packets on a grill or in an oven preheated to 400°F (200°C). Cook for 20-25 minutes or until the chicken is thoroughly cooked and the juices run clear.
Serving
  1. Carefully unwrap the packets (be cautious of the hot steam), and serve the delicious contents on a plate. Enjoy your flavorful meal!

Notes

For extra flavor, let the chicken marinate longer, around 30 to 60 minutes, if you have the time. Feel free to add other favorite veggies such as snap peas, onions, or carrots. Make sure your foil packets are appropriately sized—too small may burst, too large may affect cooking. If grilling is not an option, you can bake the packets in the oven.
