Preparation
- Begin by cutting the beef tips into bite-size pieces, if not already pre-cut.
- In a skillet over medium-high heat, add the olive oil. Once hot, sear the beef tips in batches until browned on all sides.
- In your slow cooker, add the sliced onion, minced garlic, seared beef tips, balsamic vinegar, beef broth, brown sugar, salt, pepper, and thyme. Stir to combine.
- Cover the slow cooker with the lid and set it to low heat. Cook for 8 hours.
- Once cooking time is complete, taste and adjust seasoning as needed.
- Serve your Tender Slow Cooker Balsamic Beef Tips over rice, quinoa, or mashed potatoes.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days, or frozen for up to 3 months. When reheating, gently warm in a saucepan over low heat, adding a splash of beef broth if needed. Avoid opening the slow cooker during cooking.
