  • 1 cup balsamic vinegar High-quality balsamic vinegar is recommended.
  • 1/2 cup beef broth
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 tablespoon olive oil For searing the beef.

Preparation
  1. Begin by cutting the beef tips into bite-size pieces, if not already pre-cut.
  2. In a skillet over medium-high heat, add the olive oil. Once hot, sear the beef tips in batches until browned on all sides.
  3. In your slow cooker, add the sliced onion, minced garlic, seared beef tips, balsamic vinegar, beef broth, brown sugar, salt, pepper, and thyme. Stir to combine.
  4. Cover the slow cooker with the lid and set it to low heat. Cook for 8 hours.
  5. Once cooking time is complete, taste and adjust seasoning as needed.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days, or frozen for up to 3 months. When reheating, gently warm in a saucepan over low heat, adding a splash of beef broth if needed. Avoid opening the slow cooker during cooking.
