  • 1 medium head cabbage, chopped
  • 1 cup milk
  • 2 cloves garlic, minced
  • 1 medium onion, chopped

  • 2 cups shredded cheese (cheddar or a cheese blend) Works well with either cheddar or a mix of cheeses.

  • 2 tablespoons flour
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon Italian seasoning or your preferred herbs
Oil
  • 1 tablespoon olive oil

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Stir in the chopped cabbage, salt, pepper, and Italian seasoning, cooking for another 5-7 minutes until the cabbage is slightly softened.
  4. In a separate saucepan, mix the flour with a little bit of milk to create a smooth paste. Gradually add the remaining milk while stirring over medium heat until the sauce thickens.
  5. Once the sauce is thick, pour it over the sautéed cabbage mixture. Stir in half of your shredded cheese until melted and combined.
  6. Transfer the cheesy cabbage mixture to a greased casserole dish. Spread evenly and top with the remaining shredded cheese.
Baking
  1. Place the casserole into your preheated oven and bake for about 45 minutes, or until the cheese is bubbly and golden brown.
  2. Allow to cool for a few minutes before serving hot, garnished with additional herbs if desired.

Notes

Feel free to mix and match different cheese varieties, and consider adding fresh herbs like thyme or parsley to enhance the flavor. Store leftovers in an airtight container for up to 3-4 days, or freeze for up to 2 months.
