Ingredients
  

For the Shrimp
  • 1 pound large shrimp, peeled and deveined
  • 1 cup breadcrumbs (panko recommended) for extra crispiness
  • 2 tablespoons Cajun seasoning adjust to your preference
  • 1 large egg
  • ½ cup all-purpose flour
  • to taste salt and pepper
  • vegetable oil for frying
For the Creamy Sauce
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • fresh parsley for garnish

Method
 

Preparation
  1. Rinse the shrimp in cold water, drain, and pat dry with paper towels.
  2. In one bowl, whisk the egg with a pinch of salt and pepper. In another bowl, mix the breadcrumbs and Cajun seasoning. Prepare a third bowl with flour seasoned with salt and pepper.
Cooking
  1. In a large skillet, pour enough vegetable oil to cover the bottom of the pan and heat over medium-high until shimmering.
  2. Dip each shrimp into the flour, then into the egg mixture, and finally coat in the seasoned breadcrumbs.
  3. Carefully add the breaded shrimp to the hot oil in batches and fry for about 2-3 minutes on each side until golden brown and crispy. Use a slotted spoon to transfer to a paper towel-lined plate.
Preparation of Sauce
  1. In a medium bowl, mix together the sour cream, mayonnaise, lemon juice, Dijon mustard, and garlic powder until smooth. Adjust seasoning to taste.
Serving
  1. Serve the crispy shrimp hot with a drizzle of the creamy sauce and a sprinkle of fresh parsley on top.

Notes

Adjust the spice level according to your preference. You can bread the shrimp ahead of time and store them in the fridge, then fry just before serving to save time.
