  • 12 oz spaghetti
  • 1 lb ground beef or ground turkey
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 10 oz can diced tomatoes with green chilies (like Rotel)
  • 1 10 oz can condensed cream of chicken soup (or cream of mushroom for a vegetarian twist)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup water
  • 2 tbsp olive oil
  • ½ cup sour cream
  • Optional toppings: diced avocado chopped cilantro, jalapeño slices, crushed tortilla chips

Method
 

  1. Step 1: Cook the Spaghetti
  2. Bring a large pot of salted water to a boil.
  3. Cook the spaghetti until al dente, following the package instructions. Drain and set aside.
  4. Step 2: Cook the Ground Beef
  5. Heat 2 tbsp of olive oil in a skillet over medium heat.
  6. Add the ground beef (or turkey) and cook until browned.
  7. Stir in the taco seasoning, ensuring the beef is evenly coated.
  8. Step 3: Combine the Sauce
  9. Add the salsa, diced tomatoes with green chilies, condensed soup, and 1 cup of water to the skillet with the beef.
  10. Stir well and bring to a simmer. Let it cook for 5-7 minutes, allowing the flavors to meld together.

  12. Add the cooked spaghetti to the skillet and toss to coat the pasta in the taco sauce.
