Ingredients
  

  • 12 oz spaghetti
  • 1 lb ground beef or ground turkey
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 10 oz can diced tomatoes with green chilies (like Rotel)
  • 1 10 oz can condensed cream of chicken soup (or cream of mushroom for a vegetarian twist)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup water
  • 2 tbsp olive oil
  • ½ cup sour cream
  • Optional toppings: diced avocado chopped cilantro, jalapeño slices, crushed tortilla chips

Instructions
 

  • Step 1: Cook the Spaghetti
  • Bring a large pot of salted water to a boil.
  • Cook the spaghetti until al dente, following the package instructions. Drain and set aside.
  • Step 2: Cook the Ground Beef
  • Heat 2 tbsp of olive oil in a skillet over medium heat.
  • Add the ground beef (or turkey) and cook until browned.
  • Stir in the taco seasoning, ensuring the beef is evenly coated.
  • Step 3: Combine the Sauce
  • Add the salsa, diced tomatoes with green chilies, condensed soup, and 1 cup of water to the skillet with the beef.
  • Stir well and bring to a simmer. Let it cook for 5-7 minutes, allowing the flavors to meld together.
  • Step 4: Mix the Pasta and Sauce
  • Add the cooked spaghetti to the skillet and toss to coat the pasta in the taco sauce.
  • Stir in the sour cream for added creaminess.
  • Step 5: Add Cheese and Bake (Optional)
  • Preheat the oven to 375°F (if baking).
  • Transfer the taco spaghetti to a baking dish. Top with shredded cheddar and Monterey Jack cheese.
  • Bake uncovered for 10-15 minutes, or until the cheese is melted and bubbly.
  • Step 6: Serve
