  • 4 pieces boneless, skinless chicken breasts Choose quality chicken for the best flavor.
  • 1 cup fresh spinach, chopped
  • 1/2 cup sundried tomatoes, chopped (preferably in oil)
  • 1 cup cream cheese, softened
  • 1/2 cup mozzarella cheese, shredded You can experiment with other cheese types.
  • 1/4 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • to taste Salt and pepper
  • for cooking tablespoons Olive oil Use extra virgin for best taste.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) to ensure even cooking.
  2. In a mixing bowl, combine the chopped spinach, sundried tomatoes, cream cheese, mozzarella, Parmesan, garlic, salt, and pepper. Stir well until evenly mixed.
  3. Carefully slice a pocket into each chicken breast, without cutting all the way through.
  4. Fill each chicken breast with the filling mixture, packing it tightly. Secure the openings with toothpicks if desired.
Cooking
  1. In a large oven-safe skillet, heat olive oil over medium-high heat. Sear each stuffed chicken breast for about 3-4 minutes on each side until golden brown.
  2. Transfer the skillet to the preheated oven and bake for about 25-30 minutes, or until the chicken is cooked through and juices run clear.
  3. Remove from the oven and let the chicken rest for a few minutes before slicing and serving.

Notes

Serve with roasted vegetables, creamy mashed potatoes, or a fresh salad. A crisp white wine like Sauvignon Blanc pairs perfectly.
