Preparation
- Preheat your oven to 375°F (190°C) to ensure even cooking.
- In a mixing bowl, combine the chopped spinach, sundried tomatoes, cream cheese, mozzarella, Parmesan, garlic, salt, and pepper. Stir well until evenly mixed.
- Carefully slice a pocket into each chicken breast, without cutting all the way through.
- Fill each chicken breast with the filling mixture, packing it tightly. Secure the openings with toothpicks if desired.
Cooking
- In a large oven-safe skillet, heat olive oil over medium-high heat. Sear each stuffed chicken breast for about 3-4 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for about 25-30 minutes, or until the chicken is cooked through and juices run clear.
- Remove from the oven and let the chicken rest for a few minutes before slicing and serving.
Notes
Serve with roasted vegetables, creamy mashed potatoes, or a fresh salad. A crisp white wine like Sauvignon Blanc pairs perfectly.
