Ingredients
  

For the Sugar Cookie Base
  • 1 cup unsalted butter, softened Ensure it's at room temperature
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2.5 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
For the Cheesecake Filling
  • 16 ounces cream cheese, softened Make sure it's fully softened for smooth mixing
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking pan (9x13 inches) or line it with parchment paper for easy removal.
  2. In a large mixing bowl, beat the softened butter and sugar together until it’s fluffy. Add in the egg and vanilla, mixing until well combined.
  3. Gradually mix in the flour, baking powder, and salt until a soft dough forms.
  4. Reserve about 1 cup of the sugar cookie dough for topping, and press the remaining dough firmly into the prepared baking pan.
Baking the Base
  1. Bake the cookie base for 10 minutes, then remove from the oven and let it cool slightly.
  2. In another bowl, beat the cream cheese and sugar until smooth.
  3. Add the eggs, vanilla, and flour, mixing until fully combined.
Assembly and Final Baking
  1. Spread the cheesecake filling over the cookie crust, crumbling the reserved cookie dough on top.
  2. Bake for an additional 25 minutes, or until the edges turn golden and the center is set.
Cooling and Serving
  1. Allow the cheesecake bars to cool completely, then chill in the refrigerator for a few hours before slicing.
  2. Serve cold and enjoy!
