  • 4-5 whole ripe plums, pitted and sliced Ensure plums are ripe for best flavor.
  • 1/2 cup brown sugar For caramelizing the plums.
For the cake batter
  • 1/2 cup unsalted butter, softened Should be at room temperature for easy mixing.
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs At room temperature for better incorporation.
  • 1 tsp vanilla extract
  • 1/2 cup milk Can substitute with yogurt or non-dairy milk.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a round 9-inch cake pan with butter and sprinkle the brown sugar evenly on the bottom.
  3. Arrange the sliced plums over the sugar in a decorative pattern.
Making the Batter
  1. Cream together the softened butter and granulated sugar until light and fluffy.
  2. Beat in the eggs one at a time and mix in the vanilla extract.
  3. In another bowl, whisk together the flour, baking powder, and salt, then gradually add to the wet ingredients, alternating with milk, stirring until just combined.
  4. Pour the batter gently over the arranged plums in the cake pan and smooth the top.
Baking
  1. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow the cake to cool in the pan for about 10 minutes before flipping it over onto a serving plate.
