  1. Start by dicing the bell peppers, onion, and mincing the garlic to create a delicious flavor base.
Cooking
  1. In a large pot, heat a drizzle of olive oil over medium heat.
  2. Add the ground turkey, breaking it apart with a spatula, and cook until browned, about 5-7 minutes.
  3. Toss in the diced onion and garlic, stirring until the onion is translucent, about 2-3 minutes.
  4. Stir in the diced tomatoes (with their juices), chicken broth, diced bell peppers, cooked rice, Italian seasoning, salt, and pepper. Bring the mixture to a gentle simmer.
  5. Let the soup simmer for about 20-25 minutes to meld all the flavors together, tasting and adjusting seasoning as needed.

Notes
