Preparation
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or silicone baking mats.
- In a large bowl, beat together the softened unsalted butter, granulated sugar, and brown sugar until creamy and well-combined (about 2-3 minutes).
- Crack the two large eggs into the bowl and pour in the vanilla extract. Mix until well-blended.
- In a separate bowl, sift together the all-purpose flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Avoid overmixing.
- Fold in the white chocolate chips and chopped strawberries until evenly distributed.
- Using a cookie scoop or tablespoon, place the cookie dough onto the prepared baking sheet, leaving adequate space between each cookie.
Baking
- Bake in the preheated oven for 12-15 minutes, or until the edges are golden-brown.
- Remove from the oven and let the cookies cool on a wire rack for a few minutes before transferring them to a serving platter.
Notes
Store leftover cookies in an airtight container at room temperature for up to a week, or freeze for up to three months. For reheating, microwave for 10-15 seconds.
