Strawberry Muffins Recipe

Ingredients
  

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda

  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter melted and cooled
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup buttermilk
  • 1 1/2 cups fresh or frozen strawberries diced

Method
 

  1. Prepare for Baking:
  2. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it with non-stick spray.
  3. Mix the Dry Ingredients:
  4. In a large bowl, whisk together the flour, baking powder, baking soda, salt, granulated sugar, and brown sugar until well combined.
  5. Combine Wet Ingredients:
  6. In another bowl, whisk together the melted butter, eggs, vanilla extract, and buttermilk until smooth.
  7. Create the Batter:
  8. Gradually add the wet ingredients to the dry ingredients, mixing gently until just combined. Avoid overmixing to ensure the muffins remain tender.
  9. Fold in Strawberries:
  10. Gently fold the diced strawberries into the batter, being careful not to crush them.
  11. Fill the Muffin Tin:
  12. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  13. Bake the Muffins:
  14. Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  15. Cool and Serve:
  16. Remove the muffins from the oven and allow them to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
