  • 2 cups brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract For extra flavor.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup fresh strawberries, chopped Ensure they are fresh.
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice

Preparation
  1. Preheat your oven to 350°F (175°C) and grease or line an 8x8 inch baking pan with parchment paper.
  2. In a mixing bowl, combine the melted butter and brown sugar, whisking until smooth.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, combine flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, stirring until just combined.
  5. Fold in the chopped strawberries, lemon zest, and lemon juice gently.
  6. Pour the batter into the prepared baking pan and smooth the top with a spatula.
  7. Bake in the preheated oven for 20 to 25 minutes or until the edges are golden brown and a toothpick inserted comes out clean.
  8. Let the blondies cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  9. Once cool, slice them into squares and enjoy!
