Preparation
- Preheat your oven to 350°F (175°C) and grease or line an 8x8 inch baking pan with parchment paper.
- In a mixing bowl, combine the melted butter and brown sugar, whisking until smooth.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, combine flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, stirring until just combined.
- Fold in the chopped strawberries, lemon zest, and lemon juice gently.
- Pour the batter into the prepared baking pan and smooth the top with a spatula.
- Bake in the preheated oven for 20 to 25 minutes or until the edges are golden brown and a toothpick inserted comes out clean.
- Let the blondies cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
- Once cool, slice them into squares and enjoy!
