  • 2 large eggs Room temperature.
  • 1 teaspoon vanilla extract For added flavor.
  • 200 g all-purpose flour Standard flour will work.
  • 1 teaspoon baking powder For leavening.
  • Pinch salt Enhances flavor.
For the toffee sauce
  • 200 g light brown sugar For a rich, sweet sauce.
  • 100 g unsalted butter Use fresh for best results.
  • 300 ml heavy cream For a smooth, creamy sauce.

Method

Preparation
  1. In a bowl, combine the chopped dates and baking soda. Pour in the boiling water and let it sit for about 10 minutes to soften.
  2. Preheat your oven to 180°C (350°F).
  3. In a mixing bowl, cream together the softened butter and light brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, along with the vanilla extract, until fully incorporated.
  5. In another bowl, sift together the flour, baking powder, and salt. Gradually fold this into the butter mixture.
  6. Once the dates have cooled a bit, add them along with the water to the batter, mixing until just combined.
  7. Pour the mixture into a greased baking dish and bake for about 30 minutes or until the top is golden and a toothpick comes out clean.
Toffee Sauce
  1. In a saucepan over low heat, combine the brown sugar, butter, and cream. Stir until the butter has melted and the sauce is smooth.
Serving
  1. Once baked, cut into squares, drizzle generously with toffee sauce, and serve immediately, preferably with vanilla ice cream or whipped cream on top.

Notes

Adjust sweetness by reducing brown sugar. Medjool dates are recommended. Prepare ahead and reheat before serving.
