Ingredients
  

For the cookie crust
  • 1 ¾ cups graham cracker crumbs
  • cup granulated sugar
  • ½ cup unsalted butter, melted
For the chocolate layer
  • 1 cup semi-sweet chocolate chips
  • 1 ½ cups heavy cream
  • 1 tablespoon sugar
  • ½ teaspoon vanilla extract
For the pistachio layer
  • 1 cup pistachio pudding mix
  • 2 cups milk
  • 1 cup whipped topping
For the cherry layer
  • 1 cup cherry pie filling
  • 1 tablespoon powdered sugar
  • 1 cup whipped topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs and sugar. Stir in the melted butter until crumbly.
  3. Press this mixture firmly into the bottom of a greased 9×9-inch baking dish.
  4. Bake for about 8-10 minutes or until lightly golden.
Make the Chocolate Layer
  1. In a saucepan over medium heat, combine heavy cream and sugar. Stir until warmed but not boiling.
  2. Remove from heat and add the chocolate chips, letting them melt completely.
  3. Add the vanilla extract and mix until smooth. Allow the mixture to cool slightly.
  4. Pour it over the cooled crust, spreading evenly. Chill in the refrigerator for about 30 minutes to set.
Prepare the Pistachio Layer
  1. In another bowl, whisk together the pistachio pudding mix and milk until smooth and thickened.
  2. Fold in the whipped topping gently.
  3. Spread this layer over the chocolate layer and chill for an additional 30 minutes to set.
Make the Cherry Layer
  1. In a bowl, combine cherry pie filling and powdered sugar.
  2. Fold in the whipped topping until well-combined.
  3. Spread this layer over the pistachio layer. Chill again for another 30-60 minutes, allowing for complete setup.
Cut and Serve
  1. Once fully set, cut the bars into squares. Serve chilled, and enjoy the delightful layers of flavor!
