  • 1/4 cup unsalted butter softened
  • 1 cup roasted peanuts unsalted preferred
  • 1-2 fresh jalapeños, finely chopped adjust to taste
  • 1/2 teaspoon baking soda to help aerate the candy
  • 1 teaspoon vanilla extract

Preparation
  1. Prepare the Baking Sheet: Line a baking sheet with parchment paper and set aside.
  2. Cook the Sugar Mixture: In a medium saucepan over medium heat, combine the granulated sugar, light corn syrup, and butter. Stir constantly until the mixture comes to a boil.
  3. Add the Peanuts: Once boiling, add the roasted peanuts and chopped jalapeños. Continue stirring to ensure everything is well-coated.
  4. Monitor the Temperature: Use a candy thermometer to monitor the mixture until it reaches 300°F. This takes about 8-10 minutes.
  5. Add the Rest of the Ingredients: Remove from heat and quickly stir in baking soda, vanilla extract, and salt.
  6. Pour the Mixture: Immediately pour the hot mixture onto the prepared baking sheet and let it cool for at least 20 minutes.
  7. Break Into Pieces: Once cooled, break the brittle into manageable pieces and enjoy!

Notes

For additional heat, consider adding cayenne pepper. Ensure all ingredients are ready before starting to avoid timing issues during cooking.
