  • 1 cup unsalted peanuts roasted and shelled
  • 1 cup granulated sugar
  • 1/2 cup corn syrup (Halal-certified)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1-2 fresh jalapeños, seeded and finely chopped
  • 1 tablespoon unsalted butter, for greasing pan Lightly greased pan
  • A pinch cayenne pepper (optional) For an added kick

Method
 

Preparation
  1. Grease a baking sheet with butter to prevent sticking.
  2. In a medium saucepan, mix sugar and corn syrup over medium heat. Stir until the sugar dissolves.
  3. Raise the heat to medium-high and continue cooking without stirring until the mixture turns a golden amber color, about 5-7 minutes.
  4. Quickly remove the saucepan from heat and stir in baking soda and salt. Then mix in peanuts and chopped jalapeños.
  5. Pour the mixture onto the prepared baking sheet and spread it evenly with a spatula, being careful as it will be hot.
  6. Allow the brittle to cool completely for about 15 minutes. Once cool, break into pieces and enjoy.

Notes

Store in an airtight container at room temperature for up to two weeks, or freeze for up to three months. When ready to enjoy, let sit at room temperature for a couple of hours.
