  • 4 pieces boneless, skinless chicken thighs
  • 1 cup long-grain rice Can substitute with brown rice.
  • 2 cups chicken broth
  • 1/2 cup honey BBQ sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder Adjust spice level as needed.
  • 1 teaspoon onion powder Adjust spice level as needed.
  • 1/2 teaspoon smoked paprika Adjust spice level as needed.
  • to taste Salt and pepper
  • Chopped cilantro, for garnish (optional)

Method
 

Preparation
  1. Start by seasoning the chicken thighs with salt, pepper, garlic powder, onion powder, and smoked paprika. Let them marinate for about 15 minutes while you gather the other ingredients.
Cooking
  1. In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken thighs and sear for about 5-7 minutes on each side, until they are golden brown. Remove the chicken and set aside.
  2. In the same pan, add rice and stir it around for a minute or two to coat it with the remaining oil and flavor.
  3. Pour in the chicken broth and stir to combine. Bring to a gentle boil.
  4. Place the seared chicken thighs back into the pan and drizzle the honey BBQ sauce over them.
  5. Cover the skillet with a lid and reduce the heat to low. Let it cook for about 20-25 minutes or until the rice has absorbed the liquid and the chicken is cooked through.
  6. Once done, garnish with chopped cilantro if desired, and serve hot.

Notes

Adjust the spice level according to your preferences. Store leftovers in the fridge for up to three days and reheat in the microwave with a splash of broth or water.
