Ingredients
  

Cheese Base
  • 8 oz cream cheese - softened Make sure it's softened for easier mixing.
  • 1 cup shredded cheddar cheese
  • ½ cup pepper jack cheese - shredded
Vegetables and Seasonings
  • 1 can (10 oz) diced tomatoes and green chilies - undrained
  • 1 small bell pepper - diced (red or green) Choose red or green for a pop of color.
  • 1 jalapeño - finely chopped Adjust the amount to taste!
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder
  • Salt and pepper - to taste
For Serving
  • Tortilla chips or veggies For serving

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grab a mixing bowl.
  2. In the bowl, combine the cream cheese, cheddar, and pepper jack. Mix until well blended and creamy.
  3. Stir in the can of diced tomatoes and green chilies, along with the diced bell pepper, jalapeño, garlic powder, onion powder, and chili powder.
  4. Season with salt and pepper to taste.
  5. Transfer the mixture into a baking dish, smoothing it out evenly.
Baking
  1. Place the dish in the preheated oven and bake for 20 minutes or until it’s bubbly and golden on top.
Serving
  1. Remove from the oven and let cool slightly.
  2. Serve warm with tortilla chips or fresh veggies for dipping.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. This dip can also be frozen for about 2 months.
