  • 2 cups cooked shredded chicken Use rotisserie chicken or leftover chicken.
  • 1 cup cottage cheese Choose low-fat or full-fat based on your preference.
  • 1/2 cup shredded cheddar cheese Divided into two parts.
  • 1/2 cup buffalo sauce Adjust based on your spice tolerance.
  • 1/4 cup Greek yogurt For added creaminess.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper
  • as needed chopped green onions For garnish.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, cottage cheese, buffalo sauce, Greek yogurt, garlic powder, onion powder, and half of the shredded cheddar cheese. Mix until well combined.
  3. Add salt and pepper to taste. Remember that you can always adjust the flavors later.
  4. Pour the mixture into a baking dish and spread it evenly. Top with the remaining cheddar cheese.
  5. Place the dish in the oven and bake for 20-25 minutes, or until the cheese is bubbly and slightly golden.
  6. Once done, remove from the oven and let it cool for a few minutes. Sprinkle with chopped green onions before serving.

Notes

For a vegetarian option, try substituting shredded chicken with chopped cauliflower or chickpeas. Make sure the chicken is thoroughly cooked and shredded before mixing it in. Store leftovers in an airtight container in the refrigerator for up to 3 days.
