Ingredients
  

For the Casserole
  • 2 cups cooked chicken, shredded
  • 1 bell pepper, sliced (any color)
  • 1 onion, sliced
  • 1 can diced tomatoes with green chilies (15 oz)
  • 1 tablespoon fajita seasoning Ensure it's halal-friendly
  • 1 cup shredded cheese (cheddar or blend)
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • Salt and pepper to taste
  • Tortilla chips or tortillas for serving

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the shredded chicken, sliced bell pepper, sliced onion, diced tomatoes with green chilies, fajita seasoning, black beans, corn, and a pinch of salt and pepper. Mix well.
  3. In a greased 9x13-inch baking dish, spread half of the chicken mixture evenly across the bottom. Sprinkle half of the cheese over this layer.
  4. Add the remaining chicken mixture on top and then sprinkle the rest of the shredded cheese.
Baking
  1. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
  2. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.
Serving
  1. Let the casserole cool for a few minutes before serving. Serve it with tortilla chips or warm tortillas and your favorite garnishes.

Notes

For substitutions, use cooked turkey or a plant-based protein for a vegetarian version. Avoid overcooking the vegetables; they should retain a slight crunch.
