Preparation
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the shredded chicken, sliced bell pepper, sliced onion, diced tomatoes with green chilies, fajita seasoning, black beans, corn, and a pinch of salt and pepper. Mix well.
- In a greased 9x13-inch baking dish, spread half of the chicken mixture evenly across the bottom. Sprinkle half of the cheese over this layer.
- Add the remaining chicken mixture on top and then sprinkle the rest of the shredded cheese.
Baking
- Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.
Serving
- Let the casserole cool for a few minutes before serving. Serve it with tortilla chips or warm tortillas and your favorite garnishes.
Notes
For substitutions, use cooked turkey or a plant-based protein for a vegetarian version. Avoid overcooking the vegetables; they should retain a slight crunch.
