Ingredients

  • 1 medium spaghetti squash about 2-3 pounds
  • 1-2 tablespoons olive oil
  • Salt and pepper to taste

Equipment

  • Sharp knife
  • Spoon (for scooping seeds)
  • Baking sheet
  • Parchment paper or aluminum foil
  • Fork

Method

  1. Preheat the Oven:
  2. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
  3. Prepare the Squash:
  4. Carefully cut the spaghetti squash in half lengthwise. Use a spoon to scoop out the seeds and stringy pulp from the center.
  5. Drizzle the cut sides with olive oil and season generously with salt and pepper.
  6. Roast the Squash:
  7. Place the squash halves cut side down on the prepared baking sheet.
  8. Roast in the oven for 35-45 minutes, depending on the size of the squash. The squash is done when you can easily pierce the skin with a fork.
  9. Shred into Strands:
  10. Remove the squash from the oven and let it cool for a few minutes.
  11. Use a fork to gently scrape the flesh into spaghetti-like strands. Transfer the strands to a bowl.
  12. Serve:
  13. Top the spaghetti squash with your favorite sauce, like marinara, Alfredo, or pesto. Alternatively, toss it with olive oil, garlic, and Parmesan cheese for a simple and delicious side dish.
