  • 1 cup sour cream
  • 1 cup cream cheese
Main Ingredients
  • 2 cups corn (fresh, frozen, or canned)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green onion
  • 1/4 cup chopped cilantro
Seasoning
  • 1 packet taco seasoning
  • to taste salt and pepper

Method
 

Preparation
  1. In a large mixing bowl, blend the cream cheese and sour cream until smooth.
  2. Add in the corn, diced red bell pepper, green onion, chopped cilantro, and taco seasoning to the creamy base. Season with salt and pepper.
  3. Fold in the shredded cheese until well combined.
Baking
  1. Transfer the mixture to a baking dish and spread it evenly.
  2. Bake at 350°F (175°C) for about 20 minutes, or until the top is golden and bubbly.
Serving
  1. Let it cool for a few minutes before serving with tortilla chips or veggies.
