Ingredients
  

For the batter
  • 1 cup cornmeal
  • 1 cup boiling water
  • 1/2 cup flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon maple syrup (optional) Add for sweetness if desired.
For frying
  • 2 tablespoons oil For frying the hoecakes.

Preparation
  1. In a mixing bowl, combine the cornmeal and boiling water. Stir well, and let it sit for about 10 minutes until it thickens.
  2. In a separate bowl, whisk together the flour, baking powder, and salt.
  3. Gradually add the dry ingredients into the cornmeal mixture, mixing until well combined. If you fancy a touch of sweetness, add the maple syrup.
Cooking
  1. Heat a skillet over medium heat and add oil to coat the surface.
  2. Drop spoonfuls of the batter onto the skillet, shaping them into round cakes. Cook for about 3-4 minutes on each side or until they’re golden brown.
  3. Once cooked, serve them hot and enjoy your Southern delight!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over low heat or in a toaster until warm and crispy.
