Ingredients
  

Dry Ingredients
  • 1 cup yellow cornmeal
  • 1 cup water or milk Use milk for a creamier texture
  • 1 teaspoon baking powder
  • 1 tablespoon sugar Optional for a hint of sweetness
  • ½ teaspoon salt
Wet Ingredients
  • 2 tablespoons vegetable oil or melted butter
  • as needed additional butter or oil for frying

Method
 

Preparation
  1. In a mixing bowl, combine the yellow cornmeal, baking powder, sugar (if using), and salt. Whisk them together until smooth.
  2. Gradually pour in the water (or milk) and mix it until you form a thick batter. Stir in the vegetable oil or melted butter to give it a richer flavor.
Cooking
  1. Preheat a non-stick skillet or griddle over medium heat. Add a bit of oil or butter to coat the surface.
  2. Pour ¼ cup of the batter onto the skillet for each hoecake. Cook for about 3-4 minutes until small bubbles form on the surface, then flip and cook for an additional 2-3 minutes until golden brown.
  3. Remove the hoecakes from the skillet, and repeat with the remaining batter. Serve hot with butter, honey, or your favorite toppings.

Notes

Consistency is key; adjust the thickness of the batter as necessary. For extra flavor, try adding herbs or cheese. Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to a month.
