- In a mixing bowl, combine the yellow cornmeal, baking powder, sugar (if using), and salt. Whisk them together until smooth.
- Gradually pour in the water (or milk) and mix it until you form a thick batter. Stir in the vegetable oil or melted butter to give it a richer flavor.
Cooking
- Preheat a non-stick skillet or griddle over medium heat. Add a bit of oil or butter to coat the surface.
- Pour ¼ cup of the batter onto the skillet for each hoecake. Cook for about 3-4 minutes until small bubbles form on the surface, then flip and cook for an additional 2-3 minutes until golden brown.
- Remove the hoecakes from the skillet, and repeat with the remaining batter. Serve hot with butter, honey, or your favorite toppings.
Notes
Consistency is key; adjust the thickness of the batter as necessary. For extra flavor, try adding herbs or cheese. Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to a month.
