Ingredients
  

For the cobbler
  • 4 pieces ripe bananas, sliced Make sure they are very ripe for maximum sweetness.
  • 1 cup sugar Divided into two portions.
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 cup butter, melted
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • a pinch salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Lightly grease a 9-inch square baking dish with cooking spray or butter and set aside.
  3. In a bowl, combine the sliced bananas with 1/2 cup of sugar and set aside.
  4. In another bowl, whisk together the flour, remaining sugar, baking powder, and salt. Gradually add the melted butter, milk, and vanilla extract, stirring until smooth.
Baking
  1. Pour the banana mixture into the prepared baking dish, then gently pour the batter over the top. Do not stir; let it settle on its own.
  2. Bake for about 30-35 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
Serving
  1. Allow the cobbler to cool for a few minutes before serving. It's perfect on its own or with a scoop of vanilla ice cream.

Notes

Store leftovers in an airtight container in the refrigerator for 3 to 4 days. To freeze, wrap tightly and it should last for up to 2 months. Reheat in the oven at 350°F for 15-20 minutes.
